Superfood Recipe: Cauliflower Mash

I know what you are probably thinking right now – Cauli-what-the?

Why would I want to eat mashed cauliflower when I can eat good ol’ mashed spuds?

Well a few reasons, actually.

First of all, cauli-mash is truly delicious.

Secondly, believe it or not, good ol’ spuds are not that good for you!

They are very high in natural-sugars and our carb-laden diet is one of the core culprits behind systemic inflammation – the hidden common denominator lurking beneath seemingly unrelated chronic diseases such as diabetes, heart disease, obesity, cancer and auto-immune issues.

The humble cauliflower on the other hand is truly a super-food….in fact I would even go so far as to say it is a MAGICAL food for 3 reasons;

  1. It is really high in a range of vitamins, minerals and antioxidants, and especially high in vitamin C.
  2. It contains indole-3-carbinol, a magical substance that is a potent anti-inflammatory and is especially important for women as it down-regulates the “bad” form of oestrogen which has been linked to certain types of breast cancer.
  3. The sulphur-like compounds it contains helps to detoxify the liver – and boy do we all need a bit more of that in our chemical-ridden modern-day world.

Ok, now you know how magical cauliflower is, let’s get cracking with this recipe.

INGREDIENTS

(Serves 4 – 6)

1 head of cauliflower

1/4-1/2 cup of water (depending on the consistency you prefer)

A generous knob of organic, grass-fed butter (about 1 Tbsp or a drizzle of olive oil if you don’t do dairy…but butter tastes waaaay better and is a good source of vitamin A)

Salt and pepper to taste

METHOD

Steam the chopped cauliflower until it is nice and soft and easy to poke a knife through.

Add to a blender with the butter (or olive oil) and start whizzing SLOWLY adding the water until you get the consistency you like.

Stir through salt and pepper to taste and serve as a yummy side dish! Enjoy Xx
